One of my new years resolutions is to make healthier/organic food choices. I’ve recently taken a heavy interest in the vegetarian/vegan lifestyle. I know at this time in my life I definitely cannot dedicate a full 100% to this “diet”. But I can make an effort to begin… So here is where Meatless Monday’s come in to play! You might have heard of this before – if not here’s a quick tid bit. It’s a campaign run in association with the Bloomberg School of Public Health at Johns Hopkins University. The goal of Meatless Mondays is to raise awareness of the health and environmental benefits of eating less meat; reducing our meat consumption by 15% (equal to one day a week) can make a huge difference.
This actually wont be that difficult for me because I rarely eat meat. Some of you who eat meat at every meal might think I’m crazy. But really, can a day of eating blueberry pancakes, veggie stuffed quesadillas and baked ziti be THAT horrible? I think not.
See!? That doesn’t look so rough does it? Plus, by making the baked ziti it gives me the perfect opportunity to use the most beautiful lasagna pan ever. So if you could possibly stomach these meals for just ONE day – join me next week for my second meatless Monday!
Workout was…..non-exisistent. I slept 12 hours though…and you burn more calories when you are sleeping than when you are awake. So, I’m counting that as a positive instead of a negative in my book.
Whomp Whomp Whomp… Today I’m off to shop with the 2-year-old. She always gives me her honest opinion of what I’m trying on so I’m certain we will find a winner. I also need to buy some warm accessories for Boston – Apparently they were just slammed with 18 inches of snow. So glad we picked here to go for New Years 😉 Let me know if you have any Boston “must-eat” recommendations. I’m off to brave the mall.
