A beautiful day in the neighborhood…

Happy Friday everyone! I had the day off 🙂 My employer said “It’s going to be 70 degrees on Friday – you can take the day off to enjoy and we’ll still pay you”. Score! My plan was to go hiking today in VA (which is an hour away) but I couldn’t find anyone else who had off to go with me and apparently it’s dangerous to go alone. Instead I went for a run in the 75 degree weather! For my first run outside this year I did REALLY well. I ran 5 miles in 40 minutes. Last year I ran 5 miles in 50 minutes… I guess those intervals I’ve been doing  on the treadmill really are helping! I was also going to hit up Bikram Yoga tonight but I ate my lunch too late and didn’t want to go on a full belly!

While watching my favorite morning talk show (Regis and Kelly) I had a craving for Pumpkin Fro Yo… Completely random. There was a leftover container of pumpkin puree in the fridge (um this stuff doesn’t go bad does it? I can’t remember how long it had been in there) so I made the next best thing, pancakes! One word: Amazeballs.

Pumpkin Raisin Pancakes for ONE

Ingredients – makes 5 pancakes, YES, FIVE

  • 1/4 cup organic pumpkin
  • 1 egg white
  • 1/2 cup unsweetened almond milk (you could use 1/4 cup if you want your pancakes bigger)
  • 1/3 cup whole wheat  flour
  • 1/2 tsp baking soda
  • pinch salt
  • sprinkle of stevia
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • heaping 2 tbsp of organic raisins
  • 1/2 tsp pumpkin pie spice

Directions

  • Stir the flour, baking soda, salt, stevia, cinnamon, nutmeg, and pumpkin pie spice together in a small bowl.

  • In a separate bowl, whisk together the egg white, pumpkin, and unsweetened almond milk.

  • Stir into the dry ingredients and stir just enough to moisten everything
  • Heat a skillet over medium high heat and spray with nonstick spray.
  • Pour the batter into the preheated pan and drop raisins on top immediately. Cook until bubbles appear on the top, about 3 minutes. Flip and cook an additional minute or two. Repeat with remaining batter.

  • No sharing.. These babies are all for you!

  • Drizzle with syrup if desired (duh)

  • Good thing I didn’t make extra for tomorrow morning.. I have a feeling they wouldn’t have made it past 10am.

Serving: 5 pancakes – 237 calories: 2.1 fat: 41.2 carbs: 12.2 sugars (all natural – from the raisins): 7 fiber: 9.6 protein

I would consider this a low-calorie breakfast because I like to have the majority of my calories in the morning so I have time to burn them off throughout the day. These are almost completely fat-free, packed with protein & fiber and even though it seems high in sugar its natural and 10 of the grams are from the raisins which you could omit if you wanted. Also remember that these stats are for 5 pancakes! Pretttty sweet.

Everyone appreciates a good TJ find so I have to share the dinner I had last night with you all! I bought these about 2 weeks ago and forgot about them because my freezer is throwing up with food. When they fell on me Wednesday night I figured it was a sign to make them!

Chili Lime Chicken Burgers……  They sound amazing, right? Well, they taste even better. The nutritional info on these are unreal and it was extremely filling. Definitely adding them to my staple list! We topped the chicken burgers with avocado slices and sprouts and placed them on a sandwich thin. Our side dish was sweet potato fries with my favorite spice OLD BAY! I know you non-marylanders have no idea what that is so I’m thinking this will have to be part of my next giveaway!

Random thought.. Does your music taste change with seasons? When it starts getting warmer I like to jam out to country music with my windows down. Country = summertime memories. This song is my new obsession…I will play it out in no time. There’s something about it that makes me smile 🙂

Day 22: What’s in your purse?

Oh geeze, you guys are going to hate me after this challenge post! My purse is a mess… $800 purse with yellow food dye spilled on the bottom, receipts galore (why do i even keep these?), and empty gum wrappers.

Here is the cleaned up version…Things I carry everyday.

My wallet that is overstuffed. Unfortunately it’s with receipts and not cash. 2 shades of MAC lip gloss, a notepad and pen, vaseline – i always lose chapstick so now I just carry around an entire tub, sunglasses and a tasti d-lite ice cream flavors. I’m crossing them off the list as I try them 4 down, 96 to go!

Actually, I’m kind of glad I had to do this challenge today because it made me get organized. I swear I’m not THAT messy so please don’t stop reading because you think I’m a slob 😉

  1. Oh my gosh, there are so many things I love about this post! First, I totally would have gone hiking with you today! If you ever want to plan a trip to VA, let me know! I don’t have classes Thursdays or Fridays, which means I’m completely free until I find an internship. 🙂

    Those pumpkin pancakes look bomb! I went through a pumpkin pancake kick last year, when I literally ate them every morning. Haven’t had them for awhile, so I’m thinking it’s time to bring ’em back. And the TJ’s Chile Lime Chicken Burgers are a staple in my diet. I always have them in the freezer! Sooo delicious.

    My purse is always a mess…I need to start carrying a tiny bag so that I can’t carry my life around with me!

    • Ah i wish I would’ve posted this earlier this morning and then maybe we could have planned something! I definitely want to do it the next nice day – We will keep in touch!

  5. Omg those pancakes look amazing! And those calories aren’t bad at all! Breakfast is usually my biggest meal so it’s usually like 400 calories. And yes I saw Brit’s new video, I love her!!! So happy she’s finally making a comeback 🙂

  11. My purse is always super neat when I first start using it (I switch them out alot) and then slowly it gets RIDICULOUSLY messy. Gum wrappers are a big thing, and receipts. Haha.

  30. My purse is usually full of things for my kid – snacks, bandaids, ponytail holders – you name it. And then of course I have my own stuff – phone, dental floss (must!), wallet, Vaseline…my gosh my shoulder hurts!
