Meatless Dinner

Someone must’ve known I was feeling a little snacky the other night and finished off the granola that I made in about .24 seconds. Yeah, it was that good.

When I was preparing dinner last night I heard a knock on my door. “Delivery for Miss Alyssa?” “That’s meeeee!”

I immediately busted open the box.

Love Grown Granola sent me 8 bags of granola! Woohooo. Naturally, I tried all of them. I really thought chocolate would be my favorite – But I have to go with Sweet Cranberry Pecan with this company! I plopped down on the couch and ate it straight from the bag while complaining to Adam that we need a cleaning lady because the bathroom took me 3 1/2 hours to clean. He told me it should be motivation to look for a job… I guess he’s right so I’m off to search!

But first I have to share last nights dinner. I served Adam his first meatless dinner EVER. He is a huge meat and potatoes type of guy and I wasn’t sure how he was going to like it. I made Jenna’s Boyfriend approved Spicy Black Bean burgers.

I should note that Adam doesn’t even like beans in general so I’m not sure why I tried this meal out on him as his first… He ate it and said it was good but it just tasted like beans. I think he was just being difficult because he wants a steak dinner… I on the other hand thought it was delicious! The avocado and spiciness of the burger made the perfect combination. I have leftovers that I will be enjoying for lunch on a salad today 🙂

Ok, now back to that job search so I can get a cleaning lady!!

QUESTIONS: What is a good meatless meal to try out on your meat loving boyfriend??

  1. you should do a vegan lasagna! chris’ mom makes it and uses tofu instead of cheese and i swear you can’t tell! it is so good! pesto lasagna would work too… cheese+pasta=happy bf!

  3. I just want that right this second so so badly. I’m a HUGE bean fan (they are the magical fruit, right?) and even though my boyf is also all about the meat, caveman that he is, I am just craving this burger desperately.

  4. Taco’s with Morningstar Farms Veggie Crumblers. I’ve made them for about a billion meat eaters and haven’t had one who was displeased yet! =)

  5. What a fantabulous package of goodness! Aside from veggie burgers, I’ve had success serving soy crumbles (in taco form) and chik’n patties to the menfolk.

  6. I’ll trade you my bag of Cranberry Pecan for your bab of Almond Raisin…seriously! I didn’t love the cran pecan, but the almond raisin made my heart sing =)

  7. That granola is amazing! I love the apple one too!!

    I say a chili would be good for a meatless meal! I have made an awesome one with boca crumbles!

  8. I made an amazing meatless spaghetti and “meat” sauce with Boca Crumbles. With homemade tomato sauce and all. I would try that. Basically any place you’d use meat use these crumbles. They’re awesome!

  10. Yum I’m a huge meat eater too, but I love blackbean burgers (and yours look delishhhh!) Other good meatless meals for your bf- perhaps a delicious risotto or Egg curry!

    He also likes Tofurkey Italian sausage spaghetti, or TVP tacos!

    The thing that helped him, and that he reminds me is to not call things by their original names. For example, if you make veggie patties, call them veggie patties, not ‘hamburger.’ If you make TVP tacos, call them tvp tacos, not ground beef tacos, etc. He said it was easier for him to understand that he can’t compare it to it’s meaty counterpart.

  14. You give me some serious inspiration to start COOKING meals (rather than just throwing a bunch of pre-made ingredients together LOL!)

    I and my boyfriend are vegetarians so I dont have to try too hard with my meatless meals for him! My friend made us a DELICIOUS vegan sausage the other day and we had it with spaghetti. You seriously would not know it wasn’t meat!

    This is a video and the recipe which she used exactly except for substituting the Bills Best Chik’Nish Seasoning with veggie bouillon cubes. It was seriously yummy!

  15. Gosh, I really wouldnt know about meatless recipes because I eat so much meat! Perhaps some kind of delicious peanut fried tofu? Thats what I always order at my local vegan place, its deliciousss.

  16. i’ve always been a fan of letting the vegetables be themselves. it always seems to fail when we try to pretend the vegetables are meat. instead of black bean burgers or tofurkey, etc. i like big spicy stir fries, meaty (tasting) chili, huge taco salads (w/ taco seasonings & roasted veg), or grilled pizza! those things are just naturally meatless & naturally delicious!
