Pumpkin Pie Smoothie

Are you sick of seeing pumpkin yet? Because guess what? I made another pumpkin recipe…Sorry, I’m not sorry.

When I got home from work on Friday night all I wanted was breakfast. I made myself a dippy egg, pepper jack cheese and “bacon” sandwich thin. I wasn’t satisfied so I offered to make smoothies for Adam and I while we watched a movie. Then I begged he go buy whipped cream for said smoothies.

Nothing like a piece of pumpkin pie in liquid form (with 3/4 less the calories!)

Pumpkin Pie SmoothieΒ 

Ingredients (makes 2)

  • 1 cup pure pumpkin
  • 1 cup unsweetened almond milk
  • 1 cup plain greek yogurt
  • 1 cup of crushed ice
  • 1 tbsp sugar free syrup
  • 1 tbsp brown sugar
  • 2 tbsp pumpkin pie spice
  • 2 packets of stevia
  • xanthan gum to thicken
  • 1 graham cracker sheet (divided)
  • whipped cream
  • Add first 8 ingredients to blender.
  • Blend til combined (1 minute)
  • Add 1/2 sheet of graham cracker to blender with xanthan gum to thicken
  • Blend well.
  • Pour into glasses

  • Top with whipped cream, crushed graham cracker and a tiny more pumpkin pie spice

  • Serve with a spoon bc it’s thick!


Last night we had date night

We try not to repeat restaurants because there are SO many to choose from. We went to a place called Court Street in Hoboken.

I really don’t like giving restaurants bad reviews because I’m a big fan of local businesses but honestly – this place has some work to do. Sangria was wine and water (no fruit – best part!), my stuffed shrimp was all breading, carrots were just boiled, baked potato had no seasoning and our dessert was actually bitter. Robert Irvine needs to rescue them ASAP!

  2. There is a local Italian restaurant here that I feel the exact same way about. I WANT to like it because it’s local but it’s just not good!

  7. There’s a “vegan” restaurant near me that I’ve been disappointed with every. single. time. I feel bad because I want to like it so badly! But, the food and service is just horrible. You and your man are super cute though!

  8. That has happened to me before with a restaurant- finally we decided to never go there again. We also kept going back to this one restaurant where the food was really good, but the service was terrible every time we went. Sadly it was so bad we decided to boycott it.
    I didn’t realize you lived in Jersey- I do too!

    I really hate dining out. I feel like I always order something that sounds delicious on the menu, but ends up being just “ok” or not good at all. I prefer cooking at home!

    I haven’t had that many bad restaurant experiences. One time they put chopped chicken in my salad and I took a bite and spit it into my napkin. I Wasn’t THAT dramatic, but come on dude, I asked for no meat beacuse I’m a vegetarian! Argh!
