I did it!

Anyone else have today off? I kept thinking I had to work today since Adam got up at the normal time and then it hit me…DUH, I have off today! Now I just need to figure out what to do with my time without hurting my bank account šŸ˜‰

Last night I did a couple of things…

Number 1:

I revamped my recipes page! I hope it will be a lot easier for people to search for what they are looking for!

Number 2:

I had a major fail while baking. I attempted to make Gracie’s Cake Batter BlondiesĀ and they turned out looking like this

I tried to use applesauce instead of oil, egg whites instead of whole eggs and almond milk in place of milk and clearly this wasn’t a recipe to mess with. Gracie’s looked like this

Note to self: Not everything can be healthified! At least the batter tasted good šŸ˜‰

Number 3:

I roasted my first chicken!

It took 3 hours…but it was worth it. I took Jessica’s advice and covered it in salt, pepper and olive oil. Simple andĀ delicious. This chicken was 7 pounds!!! So we have plenty of leftovers…

Any ideas for leftover chicken recipes?? I’m thinking soup, quesadillas and bbq chicken sandwiches!

Now it’s time for breakfast and since I have a little extra time I’m on my hands I made a fall favorite

2 toasted whole wheat waffles, baked apples & raisins with cinnamon, spread with some pumpkin cream cheese and drizzled with a bit of syrup. Now maybe I need a nap. I love days off!

WIAW & Oatmeal Pumpkin Cookies

So now that Wednesday’s officially over (well in 3 hours, but I’ll be long asleep by then) I can show you my Ā eats of the day. As usual I’m linking up with Jenn over at Peas and Crayons! If you haven’t joined in the Wednesday fun – feel free to do so!

Breakfast: 2 slices of topless pumpkin spice bread w/ homemade pumpkin cream cheese

Snack: Apple (picked by me!)

Lunch: Romaine, Artichoke Hearts, Cucumbers, Carrots, Red Onion, Roasted Red Peppers, Tomatoes & Vegetarian Chicken Patty w/ a drizzle of BBQ sauce

Snack: Popcorn

Dinner: Healthy Chipotle knockoff – Brown rice w/ lime juice and cilantro, Grilled chicken flavored with taco seasoning, chopped jalapeno, chopped tomatoes, chopped onions, black beans, corn, cheddar cheese, dollop of greek yogurt and avocado slice

Dessert: 2 Oatmeal Pumpkin Cookies

I posted on Facebook the other day that I made these cookies and got a lot of requests for the recipe… WELL i have a confession. I made these with 2 ingredients.

No butter, no oil, no eggs…Just the mix and pumpkin. I know, that’s cheating. But it’s good…and when you don’t keep cookies in your house and you are craving one badly you takeĀ desperateĀ measures.

This was one of the tastiest desperate measures I’ve ever taken.
