Feeling kinda snacky (sunday)…

I always have weird eating habits on Sunday… But not today! I’m sticking with my March Goals so far, so good!

  • I went to the gym 7 times during the week…my goal was 5!
  • To not overindulge on weekends and stick to my weekly routine – CHECK!
  • Get more than 5 hours of sleep a night – Averaging 8!
  • Set a weekly budget and stick to my list – A+.

This weekend I was able to squeeze a zumba, body pump and killer spin class in – i just love me some weekend workouts! During the week I always go after work but morning workouts always make me feel more accomplished and energized.

I made a “menu” for myself for the week that included 3 meals, a snack & dessert (can’t go without it!) each day – I jotted down my grocery list, headed to Trader Joe’s and actually stuck to it without buying one extra item! I’m so proud of myself… The best part about it? I got all of these organic goodies:

for $34… I can’t remember the last time I only spent $34 at the grocery store! I have a lot of yummy recipes for the week planned so I’m ready for Monday to start. Whoa, did I just say that? This will probably be the first and last time you hear me say those words in a sentence together.

I have some news for you…

The good news is – I’m loving the honey scented blueberry muffins i made on Friday…

The bad news is I’m eating them like I’m never going to see them again…

The good news is they are only 100 calories ๐Ÿ™‚ But, the bad news is I’ve been dousing them in my new favorite Peanut Butter.

I just keep telling myself it’s OK it’s a protein… AND its national peanut butter month so it’s only right that I support it ๐Ÿ˜‰

The good news is I made some seriously good hummus for the week to snack on.

Spinach and Artichoke Hummus! This was my first homemade hummus and it turned out ah.maze.ing. Sorry whole foods, you won’t be collecting 6.00 a container from me anymore ๐Ÿ™‚ The bad news is, I forgot this was a weekday snack and almost finished it off by myself TODAY. I wasn’t kidding when I said I was feeling snacky!

The good news is, while I was gawking I found a recipe that caught my eye so I also made some Peanut Butter Pretzel Granola Bars for a healthy easy treat while were on vacation.

The bad news is I just couldn’t help but drizzle chocolate all over them.

You’re right, that’s not bad news… But it would’ve been awesome news if I would’ve opened the dark chocolate bar instead of the milk! Don’t feel sorry for me… They were still delicious – they had peanut butter AND chocolate, how could they not be?

The bad news is I was still feeling snacky – so I turned it into good news and whipped up some s’mores cookies “to take to work” tomorrow. Or, at least that’s what I told myself.

I won’t tell you how many or if i even have any of these left…

But the good news is… I’m going to share all 3 recipes with you, right here, right now.

Spinach and Artichoke Hummus

Ingredients

  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1/2 cup frozen spinach, thawed and drained
  • 1 can of artichoke hearts, quartered
  • 2 Tbsp. tahini
  • 2 Tbsp. lemon juice
  • 1/4 cup Olive Oil
  • 2 cloves garlic, peeled and smashed
  • sea salt and pepper, to taste
  • a sprinkle of parmesan cheese to make it a little more like the dip.

Directions

  • Combine all ingredients in food processor until smooth.

OOO…AHHH…. ย Choose your dipping weapon of choice. I chose gluten-free unsalted pretzels. I enjoy them more than the Whole Wheat ones but they can get pricey – Maybe next I’ll make my own pretzels?!

Peanut Butter Pretzel Granola Bars

Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup chopped peanuts
  • 1/2 cup pretzels (I chose gluten-free)
  • 4 bananas, mashed
  • 2 cups of old-fashioned oats
  • dried fruit, chocolate chips, chocolate, coconut etc (optional)

Directions

 

  • Pre-heat oven to 350 degrees, line a 13×9 pan with parchment paper
  • Mash bananas
  • Add peanut butter to bananas and heat in microwave until combined
  • Add oats and peanuts, mix well.
  • Fold in pretzels
  • Spread mixture in lined pan and bake for 20 minutes or until top is browned
  • Let cool and cut into 12 squares
  • Drizzle with chocolate if you love it as much as me

These remind me of a cookie mixed with a granola bar. They are also pretty big in size so its perfect for breakfast on the go!

Last but not least…

 

S’mores Cookies

Ingredients

  • 3/4 cupย butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups flour
  • 1 1/4 cup graham cracker crumbs
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 3/4 cups semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 2 chocolate bars, chopped

Directions:

  • Preheat oven to 375 degrees.
  • Combine the butter and sugars until fluffy.
  • Mix in egg and vanilla until combined.
  • Add the flour, graham crackers, salt, and baking soda, and mix well. Stir in the chocolate chips.

IMPORTANT STEP: Eat a spoonful of cookie dough

  • Drop by rounded tablespoon onto cookie sheets
  • Bake for 8 minutes, and remove from the oven.
  • Push 3 to 4 marshmallows and a few pieces of the chocolate bar into each cookies.
  • Return to the oven and bake an additional 3-4 minutes until fully cooked. Cool cookies on a wire rack.

The marshmallow, graham crackers and chocolate combo is really trying hard to steal the number one spot in my heart(clearly chocolate + peanut butter is #1)… I’ve got to admit, these cookies MIGHT have me switch over. If you make these, make sure you get the colored marshmallows…They’re more fun ๐Ÿ™‚

WVU win & PPP Breakfast

Is it just me or are weekends getting shorter and shorter? I’m pretty sure I’m also getting lamer and lamer. My weekends used to be spent at 2 for 1 Happy Hours on Friday nights (that always led into early Saturday mornings), laying in bed with my girlfriends eating junk on Saturday’s until we got dolled up to do it all over again that night and then having a Sunday Funday starting out with a champagne brunch and ending with Football games all over different bars in the city of Baltimore. Now it consists of grocery shopping, menu planning, drop offs at the dry cleaner, laundry, cooking and catching up on my DVR – and I’m not even married…this shouldn’t be happening yet!

Speaking of DVR – I am watching “Craigslist Killer” that aired on Lifetime…Did anyone see it? It’s pretty sick and I’m a BIG baby…I hope I can sleep tonight!

Weekend re-cap time ๐Ÿ™‚

Saturday I had the other half of my Pizzert, topped with applesauce, pears and a little chocolate peanut butter! I met up with my brothers and cousin early in the AM and we headed to DC to watch the Georgetown/WVU basketball game. Guess who won? (Pretend you did not see my Blog title)

Yay! West Virginia… It was a good game – There were a lot of ups and downs!

During half-time the boys and I were chatting about buffalo sauce and with all of the cheering we’d done we worked ourselves up a nice appetite so I suggested Hooters. They’re boys, of course they are going to agree! Wellllll BAD IDEA. Worst service, disgusting food, and a long walk in the freezing cold snow. I ordered a grilled chicken house salad with a side of buffalo sauce to use as dressing. The waitress brought me out a container of lard…No joke. Um, thanks but I wont be pouring that on my vegetables!

Yuck Yuck Yuck! I requested a vinaigrette dressing instead but never got that… So i ended up eating some of these to get my buffalo fix.

Despite the service and the food…or lack thereof. The company was great ๐Ÿ™‚ I love my family more than anything ( i know i say that all the time…but it’s true and i’ll probably say it 1 million more times!)

I also saw this ad on an elevator on our way back to the car and thought DUH! Of course it can!!!

After the game I headed to the mall (hmm…that’s one resolution I’m not doing so well on). I only went to Nordstrom though…so that makes it KIND OF ok? I got a new pair of Hunter Boot sock liners (umm they’re $45?? ridic), a pair of Ippolita black onyx and sterling silver stud earrings and a Red v-neck staple shirt. I also spent some time at Barnes and Noble reading (see, I told you I was getting old!). I picked up a new Vegan cookbook “Skinny Bitch” and I’m excited to try some recipes!

I ended my night with some blog reading, leftover baked potato soup andddd you guessed it, vegan chocolate chips!

Today I woke up and was ready for my favorite spin class! I got their 20 minutes early…and it was booked. I could already tell it was going to be THAT kind of day…. Luckily I had an idea for a delicious breakfast to try when I got home… Pumpkin Protein Pancakes! I try to spend a littttle more time on breakfasts during the weekend because I have more time to experiment. These were perfect and hit the spot ๐Ÿ™‚

Pumpkin Protein Pancakes

Ingredients:

  • 2 tablespoons of brown rice protein
  • 1/4 cup whole wheat flour
  • 1/4 cup oats
  • 1/3 cup almond milk
  • 1/3 cup pumpkin puree
  • 1/3 tsp baking soda
  • 1 tsp cinnamon
  • 1 tbsp ground flax
  • 1 tsp vanilla
  • 1 tsp pumpkin pie spice

Directions

  1. Mix dry ingredients โ€“ protein powder, flour, oats, flax, baking soda, cinnamon and pumpkin pie spice
  2. Mix wet ingredients โ€“ almond milk, pumpkin, vanilla.
  3. Combine together.
  4. Heat a skillet with cooking spray to med-high heat. Drop the batter into 3 portions in skillet and heat for 3 minutes on each side. Make sure you press down after flipping the pancakes the first time.
  5. Transfer to plate and top these however you would like.

6. Digest these in 3.6 seconds.

There were really 3 of them… But the last one kind of broke so it went unpictured. The toppings I chose were a sugar-free maple syrup and a banana. This recipe is a keeper.

My friend called shortly after and asked me to attend a bridal show with her. If you don’t know…one of my dreams is to plan weddings, so I happily obliged. It was SO crowded… First thing we did was grab a glass of wine ๐Ÿ™‚ Can you guess which section we went to next? Cake Tasting!!!

There were also two that missed picture day. We each had a bite of the first 4, our own mini cupcake and a sliver of the last two. I think my favorite was the last one (not pictured) from a local bakery. It was a Devils food double chocolate cake which is weird because I’m usually not a fan of chocolate cake (or ice cream – even though I LOVE chocolate).

A candy favor table! Isn’t that pretty? Wedding planning is so fun! I’m so glad my friend invited me – we had a great time ๐Ÿ™‚

Next up on my Sunday to do list was head to my second home… Whole Foods! I spent a quick 2 hours, a little over $100 and enjoyed every second – until I got home.

While I was carrying in my 65 pound bags during 35 mph winds (neither of these are exaggerations) – bags ripped, the waters fell out of their package and rolled down the hill, my flats slipped off my heel and I tripped on a step scrapping up 3 of my knuckles. Go ahead and just call me grace. Good thing I have care bear band-aids to make my boo boo all better ๐Ÿ™‚

Dinner was also a hot mess and included not one item that should’ve been entered into this body of mine. Tomorrow’s a new day ๐Ÿ™‚

I’m going to pre-make my breakfast for tomorrow morning – My first time testing out overnight oats! Don’t forget it’s meatless monday!! Try your hardest to make it without meat and start your Monday off on a positive note.
