That. Just. Happened.

Ok good.

Well, let’s just say Tuesday and I started out on the wrong foot. I woke up at 4:24 (random time i set my alarm for) because my boyfriend had set up a car to pick me up at 4:40 am and take me to New York so I could catch my train back to Baltimore. If waking up long before the sun did wasn’t enough torture I literally bumped my head so hard on the car door that it’s bruised. Looking pretty! I was starving so I wandered around the station to find that only one shop was open. Helllllo, it’s 5 am, don’t they know this girl’s tummy is rumbling? The only “restaurant” that was open? The healthy option of Krispy Kreme. I may or may not have gotten a doughnut…But, if I did – it would be a pink glazed with sprinkles. I sat on the floor waiting for the train to arrive and once it did I was crossing over the gap between the sidewalk and train my flip-flop falls off. I mean, really? How often does that happen to someone. Most likely NEVER. But, it would happen to me. Only me. Whatever, I can’t deal with it so I just walk onto the train smiling with one shoe on like the crazy woman I am at 5:30 am. After I rummage through my carry-on suitcase to find another pair of shoes I attempt to lift it in the overhead compartment…What do ya know? It’s too over-packed to fit. Cool. I have no patience left, I’ve lost one of my favorite flip-flops and I’m still hungry because sugar isn’t filling…So, my suitcase is getting its own seat. I dare someone to say something to me. Oh wait, nope, it’s not… The train is full so I now have a neighbor. I planned on falling asleep and waking up to a “new day” but the woman next to me had other plans… Number 1, she smelled like feet and Number 2 she would NOT stop talking. “Everyone in my company is SO attractive,” “This guy really likes me but we’ve only been dating for one day and he tried to hold my hand so I’m not sure I like the PDA” “Why wont the cafe cart toast bagels?” Seriously lady…Not in the mood to chat. All i wanted was for my phone to ring… But really, it’s 6 am. Nobody was calling me. I listened to her whine and remembered I was on my way to work which included two whiney children. This is clearly the best day ever. I finally get home, get in my own car and hit a bird IN MY NEIGHBORHOOD. Windshield? Cracked. I thought hitting a bird was impossible? I notice my gas light is on… Please lord, just get me to the gas station.

That really just happened. This all happened before 9am.

Want to know what made my day better?

Baking.

I saw a recipe for Oatmeal Raisin Banana Muffins on Courtney’s blog last week and have been dreaming of them ever since. I made a few adjustments so here it goes.

Oatmeal Raisin Banana Muffins

(Makes 12)

Ingredients:

Strudel Topping:

  • 1/4 cup rolled oats (old-fashioned or quick cooking)
  • 1/8 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1 tbsp dark brown sugar
  • 1 tbsp butter, melted

Muffins:

  • 2 whole, ripe bananas
  • 1/4 cup egg whites
  • 3/4 cup unsweetened almond milk
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 cup rolled oats (old-fashioned or quick cooking)
  • 3/4 cup light brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/2 cup raisins

Directions:

Preheat oven to 400 degrees F. Line muffin tins with paper or foil cups.

For the Topping:
In a small bowl, combine 1/4 cup oats, pumpkin pie spice, cinnamon, brown sugar, and melted butter; set aside.

For the Muffins:
Mash bananas in a medium bowl. Stir in egg substitute and milk. Add the flour, baking soda, baking powder, salt, remaining oats, brown sugar, pumpkin pie spice, and cinnamon. Stir just to combine (batter should be lumpy). Stir in raisins.

Divide batter among the prepared muffin cups and sprinkle each with the reserved topping. Bake at 400 degrees for 18-19 minutes. Muffins are done when a toothpick inserted in one of the center muffins comes out clean or only with some dry crumbs from the topping. ENJOY!

When Courtney said these reminded her of a soft chewy oatmeal raisin cookie she wasnt lying.. These were perfect. I had one for lunch with yogurt and maybe another one on the side 😉 I usually leave my baked goods at the house I nanny so I’m not tempted to eat them at home but I brought a couple of these suckers home.

My day went OK up until 5pm… When I got home with my groceries.

Half of them rolled down the hill. I think I have poison ivy. I need to go to bed.

I did get all of this

for just about the same price it cost me to fill up my gas tank. Does that make this a good or bad part of my day?

All I know is that out of all of these groceries…the only thing I’m worried about right now is this.
