Fishy

Happy 1.11.11! This will only happen 2 times in our lifetime (2.22.22) so I guess it’s kind of special… I’m still waiting for that snow they promised us. They even called early dismissal on our County’s school’s with not ONE snowflake on the ground. Looks like another false alarm!

I tried another new breakfast today.. Banana Pudding Polenta! Luckily this one was A LOT better than yesterday’s. I got the recipe from Jenny and switched it around a little bit. Overall I really enjoyed this but it took over an hour to make! So I suggest it for a weekend or a day where you don’t have to be at work by 8am.

Whoops… I was a little excited to dig into this after waiting over an hour so I took a picture after my serving had been tossed into a bowl.

It had a nice creamy consistency like pudding but there was a little crunch on the bottom which made it even better.

Topped with Yogi Blueberry Granola Crisps, the rest of the Almond Butter from yesterdays meals and some blackberries. I’m sure everyone has a favorite granola but this is by far the BEST I have ever had. It taste like candy to me… I wouldn’t be surprised if you caught me in the kitchen pouring this bag straight into my mouth.

Banana Polenta Pudding

For the Polenta:

  • Mix together 1/2 cup corn flour with 1/2 cup water
  • Add mixture to 1 cup boiling water + pinch of salt

Simmer and stir for about 10 minutes until the mixture absorbs all the liquid and thickens

For the pudding:

  • 1/2 cup almond milk
  • 1 flax egg ( 1 tbsp flax + 3 tbsp hot water)
  • 1 Tbsp agave
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon

To assemble:

Layer a greased ramekein with banana slices and top with polenta mixture. Blend together pudding ingredients and pour over banana and polenta. Bake at 325 for about 45 – 60 minutes.

It’s worth it 🙂

The girls and I went to the library for Penguin Day…crafts, songs, games and stories. I checked out a couple of things – A new dance workout video, Vegetarian Lunchbox recipes and a Princess Party Planning book. The 5 year old’s birthday is coming up in a couple of weeks so we are trying to get some idea’s together! We looked over all the books while snacking on Buffalo flavored Hummus… Yes, you read that right. This tastes exactly like Buffalo Chicken Dip. They also have one that tastes like Crab Dip. SO good… A little pricey, but a little goes a long way.

Lunch was pre-made. Thank you Whole Foods.

Brown Rice Sushi w/ Spicy Tuna & Cucumber – Side of green grapes. I love Whole Foods Sushi. It always tastes so fresh and not many places offer brown rice!

I headed to the Spa for some beauty maintenance after work – Longgg Overdue. Then I hit the gym…I had ALL of my clothes, shoes etc and I was on time. Hmm…must be my lucky day (1.11.11). Even though I accidentally grabbed this classy shirt instead of a workout tee.Oh well, that wasn’t going to stop me. I did the stairmaster for 20 minutes and then took the boot camp class(finallllly!!). I love that class – 5 minute warm up, 25 minutes of intense cardio, 15 minutes of weights, 5 minute cool down and 10 minute abs. I guarantee I’m sore tomorrow since I haven’t done this class in a while!

Dinner was fish tacos – First time I’ve had these! The recipe is very simple and only has a couple of ingredients. I also made a fresh avocado sesame spread that added a little more flavor.

Fish.

Sesame Avocado Spread

Assembled with a dollop of greek yogurt and red cabbage on a brown rice wrap.

I was always nervous to try a fish taco because fish + tacos just didn’t seem right to me. I now approve.

Dessert was my banana soft-fro-yo. I am in love with this combination.

Time for bed and to sleep with my jammies on inside out in hopes for the snow to finally make its appearance! I also just realized I had a lot of fish today… Hope I don’t turn into one.
