Hellllllo Thursday! Thank you all for being smarter than me and letting me know the machine I was using and calling a Motion Trainer was called an Arc Trainer 🙂 Today is a busy one so let’s get to it!

Todays breakfast included 2 Whole Wheat Vans Waffles topped with defrosted mixed berries and a dollop of Better n Peanut Butter.

Love these! I ate them in my car while driving to work – Super talented 😉 (just kidding, mom&dad)

Lunch was leftover Sweet Potato Gnocchi. Just as good re-heated! (No picture necessary) If you didn’t see my post yesterday you must go to Trader Joe’s and pick this up.

I also snacked on the protein bars I made last night… These honestly taste like candy bars! They feel sinful… and I like it.

Have I told you before how much I LOVE crockpots? You just throw everything in there in the morning and come home to a wonderful aroma and a dinner ready to serve. This morning I made a healthy Turkey Chili because I knew I had a busy night ahead of me.

Easy Crockpot Turkey Chili

Ingredients

  • 1 lb 99% fat-free ground turkey breast
  • 1/2 of an onion, diced
  • 1 green pepper, diced
  • 1 can of kidney beans
  • 1 can of diced tomatoes w/ jalapeno
  • 1 cup of frozen corn kernels
  • 2 tbsp olive oil
  • 2 Tbsp. chili powder
  • 1 Tbsp. cumin powder
  • 1 tsp. smoked paprika
  • splash of Tabasco sauce (to taste)
  • Splash of apple cider vinegar
  • Cheese, Sour Cream (Greek Yogurt), Chips, Green Onion as garnishes

Directions

  • Put the tomatoes, kidney beans, apple cider vinegar, frozen corn kernels, and spices into the slow cooker.
  • In a large nonstick skillet, saute the peppers and onions in the olive oil on medium heat. When the onions are soft, add the ground turkey and continue to cook, breaking the turkey up into small chunks with a spatula or spoon. When the turkey is browned and cooked through, add the turkey, bell pepper, and onion mixture to the crock pot and stir to combine.
  • Cook the chili on high for 3-4 hours or on low for 8 hours. Season with salt, pepper, and Tabasco to your taste.
  • Serve the chili hot in bowls with desired toppings

This meal is great for a crowd, a Sunday afternoon, a chilly night or even a Thursday when you are running around like a mad woman.

I was able to get a boot camp workout in this afternoon – Consisted of 3 minutes intense cardio followed by 3 minutes of weights for an entire 60 minutes. It was a sweaty one!
